How to Prepare SRF X Southside Barbeque Pit-Smoked Products

Snake River Farms has partnered with Southside Market and Barbeque to create a line of smoked, fully cooked staples of Central Texas BBQ: brisket, beef short ribs, pork steak and sausage.

Smoked on a classic off-set smoker burning Texas post oak wood, these authentic smoked American Wagyu and Kurobuta pork items are delicious and easy to prepare. Read on to learn the specific heating instructions for each cut.

 

Products: Smoked Beef Brisket, Smoked Beef Ribs, Smoked Pork Steak 

 

Oven Preparation 
  1. Thaw completely in the refrigerator.
  2. Heat oven to 350°F.
  3. Wrap item aluminum foil.
  4. Cook until internal temperature reaches 165°F. See chart for approximate cook times.

 

Grill Preparation
  1. Thaw completely in the refrigerator. 
  2. Set-up charcoal or gas grill for two-zone cooking, with a hot side and a side with no direct heat. Adjust vents/control so the temperature of the indirect side is 300°F. 
  3. Wrap item aluminum foil. 
  4. Cook until internal temperature reaches 165°F. See chart for approximate cook times.

Products: Smoked Beef Sausage, Smoked Jalapeno Cheddar Sausage 

 

Stovetop Preparation 
  1. Thaw completely in the refrigerator.
  2. Heat a heavy skillet over medium heat.
  3. Add one tablespoon vegetable oil. When hot, add sausages.
  4. Turn sausages several times to cook evenly. 
  5. Remove from heat when the sausages are plump, the casing is firm and the internal temperature is 165°F. 

 

Grill Preparation 
  1. Thaw completely in the refrigerator.
  2. Set-up charcoal or gas grill for two-zone cooking, with a hot side and a side with no direct heat. Adjust vents/control so the temperature of the indirect side is 300°F.
  3. Place sausages on the grill, turning to prevent them from burning.
  4. Cook until internal temperature reaches 165°F. Total cook time is about 15 to 20 minutes.
