Brisket

The brisket primal is sourced from the lower chest area, specifically the pectoral muscles of beef cattle. Known to be more tough due to the heavy use of the muscles, when cooked properly, it is extremely flavorful. Briskets are comprised of two main sections: the "point" (superficial pectoral muscle) and the "flat" (deep pectoral muscle). The "deckle" is the hard fat and intercostal meat on the inside surface of the brisket; however, some refer to the point as a deckle.

Everything you need to know before your first bite.

Find answers to our customers' most commonly asked questions.

Who is Southside Market and Barbeque?

Southside Market and Barbeque was founded in 1882 in Elgin, Texas and is currently owned and operated by Bryan and Rachel Bracewell, the third generation of the family to operate the storied business. Today, Southside continues its tradition of excellence using the time-proven techniques and ingredients to produce world class BBQ.

What is American Wagyu?

American Wagyu is purebred Japanese Wagyu crossbred with high-quality American cattle breeds. This all ready pre cooked

"This all ready pre cooked smoked brisket is so so delicious that it practically melts in your mouth. I try to have one ready in my freezer so whenever that BBQ craving stirs inside. . . lo & behold you have it ready. You still need to heat it up and that will bring it to a perfect cook. Just remember to not overcook and follow the heating instructions that are clearly done. Save the leftovers to add to your chili, sandwiches, frittata or whatever you want to add that smoky beefy flavor. Pro tip! Don't have to eat all at once. Just cut off sections after defrosted and eat section by section. It will disappear fast if you had a party😋"
