Ingredients

4 strips Kurobuta bacon, cut into 1-inch pieces

1 pound American Wagyu ground beef

2/3 cup diced white onions

1 (12 count) pack Hawaiian sweet slider rolls

8 slices sharp cheddar cheese

1/4 cup Thousand Island Dressing
-
1/2 cup sliced bread-and-butter pickles
-
2 tablespoons unsalted butter, melted

1 tablespoon white sesame seeds
Directions
Add the bacon to a large skillet set over low heat. Cook the bacon, stirring frequently, until it is crispy and all the fat has rendered. Using a slotted spoon, transfer the bacon to a paper towel-lined plate.
Remove all but 1 tablespoon of the bacon drippings from the pan. Increase the heat to medium-high. Add the ground beef and diced onions to the pan and cook, breaking the meat apart with a spatula, until it is no longer pink. Carefully drain any grease from the pan.
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Halve the rolls widthwise and place the bottom half on the baking sheet. Arrange four slices of cheese in a single layer atop the rolls. Spread the Thousand Island Dressing atop the cheese.
Spoon the meat mixture atop the dressing then arrange the pickles and reserved crispy bacon atop the meat. Place the remaining four slices of cheese atop the bacon.
Place the top half of the rolls on the sliders. Brush the tops of the rolls with the melted butter then sprinkle them with the sesame seeds.
Bake the rolls until the cheese is melted and the rolls are toasted, about 10 minutes, then serve.
