Snake River Farm Kurobuta pork salami is handcrafted by the Journeyman Meat Company located in Healdsburg, California. Journeyman uses Old World techniques, family traditions, and the bounty of local farms to create some of the best cured meats in the world. 

We offer our authentic Italian, small batch salami in different flavors which can vary from season to season. 

Finocchiona - locally sourced fennel and Sonoma County white wine
Soppressata - blend of red wine, garlic, Italian chilis, and a hint of allspice
Fattoria - Calabrian chilis and other zesty elements, tempered with the sweet and citrus notes of orange zest
Sonoma Bianco - aromatic rosemary and sage from Sonoma County and full bodied Chardonnay
Aged Gouda & Porcini - perfectly aged Gouda cheese and aromatic porcini
Vino & Aglio - a savory combination of Chardonnay wine and garlic
Truffle - Kurobuta pork infused with the earthy aroma and flavor of real truffles

This shelf stable salami requires no refrigeration and ships directly from Journeyman in Healdsburg, California. Delivery times are approximately 2 to 5 days depending on delivery address.

Each salami chub weighs 5 to 7 oz.

SRF salami is packed in cryo-vac plastic packing to prevent drying. It is shelf stable, but store in the refrigerator for the longest shelf life.

What is Kurobuta Pork?

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.
