Cooking Tips

This savory bratwurst is made by Journeyman Meat Co. and combines SRF Kurobuta pork shoulder with our apple brined uncured bacon.  It has the hearty flavor and texture of a traditional bratwurst with the surprising hints of sweetness and smoke from the bacon. Made with whole muscle pork shoulder, not trimmed pieces, for a robust pork flavor and firm bite. Delicious simmered in beer, pan-fried or cooked on a grill.

Average weight: 12 oz. Each package contains 4 sausages.  

Our uncured bacon bratwurst is raw and requires cooking. There are many ways to prepare our bratwurst, but here are some tips that apply to any method:

Completely thaw before cooking. Place frozen brats on a plate and place in the refrigerator for 1 to 2 days.

Cook to a final temperature of 160°F.

Classic Method
Fill a saucepan about halfway with beer, water or a combination of both and bring to a low boil.

Add bratwurst and simmer for 10 to 12 minutes or until the internal temp reaches 160°F.

Heat a lightly oiled skillet over medium. Strain brats and sear in the pan, turning frequently, until brown on all sides.

Grill
Heat grill to medium.

Place bratwurst on hot grill grates, turning every two to three minutes. Cook until internal temp of brats reaches 160°F. (About 10 to 15 minutes.)

If a darker sear is desired, turn grill to high and quickly sear brats.

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.

Start with fully thawed sausages. Use a grill or skillet to heat, turning to evenly brown all sides. Heat to an internal temperature of 165°F. Remove from the heat, allow to rest 3 to 5 minutes and serve.
