Snake River Farms spare ribs are cut St. Louis style and perfect for the 3-2-1 method on your smoker. These richly marbled ribs are also great on the grill or prepared in the oven. These full sized ribs are larger than our baby backs. These spare ribs are 100% Berkshire (Kurobuta) pork with a deep pink color, rich flavor and juiciness. 

The membrane found on the bone side of all pork ribs is not removed. Kurobuta ribs are smaller in size than conventional pork, and we do not recommend them for competitions.

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.

"We were very disappointed in our recent delivery. The ribs were REALLY small. We've ordered them twice before and been very happy with them. This time we ordered 3 racks and wish we hadn't. We still have two left but they're nearly impossible to cook and have them remain moist. Don't even try smoking them, they will dry out to dust.
