Oven: Season ribs, wrap in foil and bake for 2 to 2.5 hours at 350°F or until the internal temp is about 195°F. You can add 1/2 cup of apple juice or chicken stock to the sealed foil pouch to help braise the meat. You can also try this recipe for Kurobuta Short Ribs with Guava BBQ Sauce.

What is Kurobuta Pork?

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.

One of my favorite cuts

"One of my favorite cuts in the Kurobuta collection. They are thicker than most pork short ribs and if cooked low and slow, they come out of the smoker like miniature shoulders, but take half the time. They take about 5 hours at 225°. Cook them the same as a shoulder. Absolutely fantastic!"
