Place in oven and roast until the internal temperature is 130°F to 135°F (about 1.5 to 2 hours.

Remove from oven. Cover with foil and allow to rest for 20 to 30 minutes.

What is Kurobuta Pork?

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.

"Roast was tender and very flavorful. However, I thought it was very fatty. Only about 30% of meat was edible. I understand that heritage pork is supposed to have more fat. This is the second time I have purchased the Rack of Pork. The first roast while still having plenty of fat had much more meat we could eat. I probably would not purchase this roast again."

I was so disappointed with

"I was so disappointed with the rack of pork. I had ordered this previously and it was amazing. This roast had so much fat marble throughout each chop it was difficult to eat. So disappointing and surprising that 2 roasts could be that different. For the price it was a shock"
