The Snake River Farms rack of pork is the Kurobuta equivalent of a bone-in beef prime rib roast. Our master butchers expose the bones for an exciting table presentation. Each natural full rack of pork is between 10 to 12 bones in length and provides a generous serving for 8 to 10 people.

Creating a remarkable dinner for the holidays or a Sunday dinner is quick and easy with the Kurobuta rack of pork. It creates a feast for the eyes and palate that serves a crowd. Everyone at the table receives their own juicy pork loin chop attached to a frenched bone.

The Kurobuta rack of pork is well marbled with a thick fat cap. Here is a simple method to ensure it is juicy and flavorful. The roast is brought to temperature in the oven, rested and finished at high heat.  

Heat oven to at 250°F. Season rack of pork with salt and pepper. Place in a roasting pan with a V rack or on a wire rack in a rimmed baking sheet. 

Place in oven and roast until the internal temperature is 130°F to 135°F (about 1.5 to 2 hours.

Remove from oven. Cover with foil and allow to rest for 20 to 30 minutes. 

Heat oven to 500°F. Return rack of pork to the oven and roast until the exterior is brown and crisp. About 15 minutes.  

Remove from oven. Since it's already rested, immediately slice and serve.
