Snake River Farms pork shanks are the starting point for a delicious and hearty, slow cooked meal. They are delicious slow cooked with root vegetables until the pork is fall-off-the-bone tender or cooked Osso Buco style with wine.

These are hind shanks from 100% Berkshire hogs adding the rich flavor that is unique to Kurobuta pork. Each shank weighs about one pound and has two large internal bones. These are not visible in the raw shank, but are exposed as the pork slowly cooks.

Average weight: 2.5 lbs. Each package contains 2 shanks.

Pork shanks are easy to braise on the stove top, oven or smoker. Here’s a simple method for braising them in the kitchen.

Season generously with kosher salt and pepper. If desired, roll them in flour to add texture and flavor. 

Heat neutral vegetable oil in a Dutch oven or stock pot over medium heat. 

Brown shanks on all sides, including the top and bottom. Remove from the Dutch oven. 

Add 3 cups chopped onions, carrots and celery and cook 5 minutes or until soft. 

Return shanks to the pot and cover with 1 cup white wine and enough chicken or beef stock to cover. 

Bring to boil, cover and reduce to a simmer. Braise for 2.5 hours or until tender.
