Cooking Tips

The Kurobuta pork belly is rich with flavor and possesses a remarkable melt-in-your-mouth texture. The skin is removed from this product. Our pork belly is at its best prepared with a low temperature, slow cook technique like braising or oven roasting to develop a meltingly delicious tenderness. A final sear will impart a beautiful brown finish that is crisp and addictive.

SRF Kurobuta pork is all natural and is raised without any added hormones. We produce our pork belly without the skin. We are not able to fulfill requests for a skin-on pork belly.

Average weight: 6 lbs.

This is a natural product, and actual weights may vary by +/- .5 pounds.

Pork belly is a versatile cut that is rich from the fat cap and has abundant marbling.

A partially frozen pork belly is easier to cut when your recipe calls for thin slices.

Score the outside fat cap to expose surface area and create a crispy exterior.

This cut takes well to preparation in the smoker, on the grill or in the oven.

Internal temperature is the most accurate way to test doneness.

What is Kurobuta Pork?

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.
