Cooking Tips

Our 100% Kurobuta boneless pork loin roast is a perfectly sized cut that is one-third of a full pork loin. This is a Snake River Farms favorite because it can be used so many ways. Cut this versatile item into beautiful boneless pork chops, butterfly for a festive presentation or simply roast the entire piece for a simple and delicious dinner. Kurobuta is the Japanese name for 100% Berkshire pork.

Average weight: 1.75 lbs.

Be sure to completely thaw your roast before cooking.

Internal temperature is the most accurate way to know if your pork roast is done. The USDA recommends 145°F, but experiment with slightly lower temps to maximize flavor.

Rest pork roasts 10 to 15 minutes before serving to let the internal temperature equalize and allow the juices to be reabsorbed.

Kurobuta pork is delicious with just salt and pepper, but they also take well to ethnic flavors and spice.

Finish your roast with a light sprinkle of flaky salt for a nice presentation and an appetizing salty crunch.

What is Kurobuta Pork?

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.
