“Party ribs” will always win your guests over on game day. These individually smoked Kurobuta Pork Spare Ribs are tossed in a homemade smoked hot honey to feature a balance of tenderness and caramelized char, which is what makes them so unique. Though the flavor of these party ribs is top-tier, this is an awesome beginner-friendly recipe that will impress your friends and family.
Ingredients

2 racks Kurobuta Pork Spare Ribs

¼ cup dark brown sugar

1 tablespoon smoked paprika

1 tablespoon ground black pepper

2 teaspoons coarse salt

1 ½ cups honey
-
2 dried Ancho Chilies
-
2 tablespoons red pepper flakes

2 tablespoons water

Cooking oil
Directions
Preheat smoker to 250°F. Hickory, Cherry or Apple pellets work great.
Trim any hanging pieces or hard fat from the spare ribs then cut spare ribs into individual ribs.
In a small bowl, combine the dark brown sugar, smoked paprika, black pepper and salt.
Season the individual ribs with the homemade BBQ pork rub using your preferred cooking oil as a binder.
Place the ribs on the smoker bone side down and cook at 250°F.
For the hot honey; In a small saucepan or skillet add the honey, dried ancho chilies, red pepper flakes and water. Smoke alongside the party ribs.
After 2 hours, remove the hot honey and strain. Add some of the smoked pepper flakes back into the hot honey for desired texture.
After 3 hours the ribs should be around 195-200°F internal temperature. Continue smoking if the ribs are not quite there yet. When the ribs are ready, add the ribs to a mixing bowl and toss in the homemade hot honey.
Serve with extra hot honey and enjoy.
