Simply grilled Kurobuta Pork Chops are accompanied by a sweet and bright lemon-blueberry sauce. The richness of the Kurobuta Pork pairs nicely with the delicious lemon-blueberry sauce. This recipe makes extra sauce which you can stir into a mocktail or cocktail, or spoon over a scoop of vanilla ice cream and grilled peaches. Keep it covered in the refrigerator and it will keep for at least a week. If you have SRF’s Perfect Pork Rub on hand, you may substitute it for the pork seasoning.
Ingredients
Lemon-Blueberry Sauce

3 cups fresh blueberries

½ cup sugar

zest of 1 lemon

juice of 1 lemon

2 tablespoons white balsamic vinegar, or other vinegar

½ teaspoon salt
Grilled Kurobuta Pork Chops

4 SRF Kurobuta Bone-in Pork Chops
-
1 tablespoon brown sugar
-
1 teaspoon kosher salt
-
½ teaspoon pepper
-
½ teaspoon paprika
-
½ teaspoon garlic powder
-
½ teaspoon onion powder

1 lemon, halved, optional
Directions
Prepare the lemon-blueberry sauce; In a medium saucepan over medium heat, add the blueberries, sugar, vinegar, salt and 2 tablespoons of water. Cook, stirring occasionally, for 10 minutes, until the blueberries have burst and sauce has thickened slightly. Remove from heat and allow to cool.
Prepare the Kurobuta Pork Chops; In a small bowl, combine the brown sugar, salt, pepper, paprika, garlic powder, and onion powder, and stir to combine. Season the porkchops on all sides with the seasoning.
When ready to cook, preheat the grill to medium-high heat (400°F). Place the pork chops directly on the grill grates. Place the lemon, cut-side-down directly on the grill grates and grill until slight charred. Cook the pork chops, flipping after 5 to 8 minutes, until golden brown and the internal temperature reaches at least 140°F, or desired doneness, about 15 minutes total. Remove the pork chops and lemon from the grill. Let the pork chops rest for 5 minutes.
For serving, place the pork chops on a serving platter and accompany with the lemon-blueberry sauce, and grilled lemons, as desired. Enjoy!
