Inspired by a classic Middle Eastern street food, these grilled Arayes turn richly marbled SRF Wagyu Ground Beef into something crisp, savory, and deeply satisfying. The seasoned beef is packed into pita and grilled until the bread is golden and the filling is beautifully cooked, then paired with cool tahini yogurt and sharp, sumac-laced pickled onions. Fresh mint and parsley bring brightness to every bite, making these perfect for sharing straight from the grill.

Ingredients
For the Arayes
- 1 lb SRF Wagyu Ground Beef
- 1 small yellow onion, grated
- 2 cloves garlic, minced
- 3 teaspoons cumin
- 2 teaspoons smoked paprika
- 2 teaspoons kosher salt
- ⅓ teaspoon black pepper
- ¼ cup finely chopped mint
- ¼ cup finely chopped parsley
- 4 – 6 pita breads, depending on diameter, sliced in half or quarters
- Olive oil, for brushing
Tahini Yogurt Sauce
- 1 cup plain yogurt
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt, to taste
- Water, as needed to thin
Quick Pickled Sumac Onions
- 1 small red onion, finely sliced
- ½ tablespoon sumac
- ¼ cup apple cider vinegar
- 1 tablespoon sugar
Directions
Pickle the Onions
In a saucepan, combine the apple cider vinegar, sugar, sumac, and sliced red onions. Bring to a simmer and cook for 5 minutes.
Remove from the heat and allow to cool before serving.
Make the Tahini Yogurt Sauce
In a small mixing bowl, combine the yogurt, tahini, lemon juice, garlic, and salt. Stir until smooth.
If the sauce is too thick, add water one tablespoon at a time until you reach your desired consistency. Refrigerate while you prepare the Arayes.
Prepare the Beef Filling
In a large mixing bowl, combine the Wagyu ground beef, grated onion, garlic, cumin, smoked paprika, salt, pepper, mint, and parsley. Mix gently until just combined, being careful not to overwork the meat.
Fill the Pita
Stuff each pita with approximately 1 inch of the ground beef mixture. Arrange the filled pitas on a sheet pan and brush both sides lightly with olive oil.
Grill the Arayes
Heat your grill over medium-low heat. Grill the Arayes for approximately 5 minutes per side, until the pita is golden and the beef is cooked through.
Serve
Serve the grilled Arayes warm with the tahini yogurt sauce and quick-pickled sumac onions.
