How to Pick the Right Grade for Your Tastes

To understand how Snake River Farms classifies its beef grades, it helps to know how the United States Department of Agriculture (USDA) grades domestic beef. The USDA system separates beef into eight categories based on intramuscular fat (marbling) and key eating qualities like tenderness, juiciness, and flavor. The two highest USDA grades are Prime and Choice, with Prime featuring abundant marbling.

At Snake River Farms, our beef exceeds USDA standards. To measure these higher levels of marbling and quality, we use the 12-point Beef Marbling Score (BMS) a system used to evaluate beef marbling.

Our American Wagyu grades align with this scale as follows:

  • SRF Silver® – BMS 5. Abundant marbling equivalent to USDA Prime.
  • SRF Black® – BMS 6–8. Significantly more marbling than USDA Prime.
  • SRF Gold® – BMS 9–10. Dramatically more marbling than USDA Prime.
  • SRF Gold Plus™ – BMS 11–12. The highest marbling available from Snake River Farms.

SRF Gold Plus Cooking Tips

The high degree of marbling in SRF Gold Plus™ benefits from slightly higher cooking temperatures to allow the intramuscular fat to fully render. Many chefs find this beef most flavorful and tender when cooked closer to medium. Even steak lovers who typically prefer rare cuts often find that medium rare to medium yields the most satisfying experience.

  • Recommended finished internal temperature: 130°F
  • Ideal range: 125°F–135°F for excellent results
  • Resting: Allow a minimum of 10 minutes before slicing to let the internal temperature equalize and the marbling redistribute for optimal flavor and juiciness.
