The zabuton is a richly marbled steak that's unique in flavor and texture. Prepare it as you would a New York strip.

Reverse searing (cooking at a low temp, then finish searing) is an excellent method to prepare this steak. The steakhouse method is a good secondary technique to use. Regardless of the method used, be sure to get a hard sear to bring out the most flavor.

Rest your zabuton at least 10 minutes before serving to let the internal temperature equalize and allow the juices to be reabsorbed.

Finish your steak with a light sprinkle of flaky salt for a nice presentation and an appetizing salty crunch.

"I'm giving this a one star based on price vs quality. I buy a lot of steaks and more here and this was probably the worst. It was rather tough, even at medium rare and lacked flavor, even less so then their sirloin cuts which are significantly cheaper. There are so many better cuts to chose from then this, especially if you're a new customer. I'll stick to the cuts I know are good moving forward."

First time I've ever had

"First time I've ever had this cut. I must say that it was delicious!!! I also made a couple of the Gold Plus Filets. . . I have to say that I liked the filet best!!! Both we cooked the same way, same temp, etc. . . The filet just had a better texture and flavor, for my liking. But, the Zabuton Block was definitely enjoyed by the rest of my party. Overall, a nice cut."
