30-Minute Ground Beef Fried Rice

Ingredients

  • 1 pound Snake River Farms Wagyu Ground Beef

  • 2 tablespoons neutral oil, such as avocado or vegetable

  • 1 cup diced yellow onion

  • 1 ½ tablespoons minced garlic

  • 2 teaspoons minced fresh ginger, (from about a 1-inch knob)

  • 4 cups cooked and cooled long grain white rice

  • 1/3 cup low sodium soy sauce

  • 3 large eggs, whisked

  • 2 cups frozen peas and carrots, thawed and drained

  • Sliced scallions, for garnishing

Directions

  1. Add the oil to a large, tall-sided skillet or wok set over medium-high heat.

  2. Once the oil is hot, add the onions, garlic, and ginger, and cook, stirring, until the onions are translucent, about 3 minutes.

  3. Add the ground beef and cook, breaking it apart with a spatula, until it is no longer pink, 5 to 7 minutes.

  4. Add the rice and soy sauce and toss to combine.

  5. Make a hole in the center of the rice and add the eggs. Cook, stirring frequently, until scrambled then fold the eggs into the rice and beef.

  6. Stir in the peas and carrots then garnish with scallions and serve.
