SRF Gold Plus™ Wagyu NY Manhattan slices are deeply marbled and cook quickly. Since they are thin, accurately checking the internal temperature with a thermometer is difficult. This is one of those rare times we recommend watching the slices as they cook to decide when they are done. The goal is to sear at least one side to a golden brown. At that point, the slices may be cooked and can be removed from the heat.

For searing, use a skillet on medium high heat. Cook for about 90 to 120 seconds. Flip and sear the other side if needed.

It’s possible to cook on a grill, however, use caution to ensure the slices don’t slip through the grates.

For shabu shabu or hot pot, cook as you would any sliced beef places the slicing directly into the hot water or broth.

Loin

The loin primal supplies some of the most desirable steaks and is located below the backbone, between the rib and round sections. The sirloin is the portion toward the rear of the loin and is the source of SRF Wagyu™ top sirloin steaks and the picanha (coulotte). The front portion of the loin is known as the short loin and is home to the SRF Wagyu™ New York strip, Porterhouse, T-bone and filet mignon steaks.

What is SRF Gold Plus™?

SRF Gold Plus™ is the highest grade of beef we offer at Snake River Farms, with a Beef Marbling Score (BMS) of 11 to 12. This level of marbling delivers an exceptional eating experience with an incredibly tender texture and rich, buttery flavor. If you're looking for a steak that melts in your mouth and offers the ultimate in luxury, SRF Gold Plus™ is the perfect choice.

What is the difference between SRF Black, SRF Gold and SRF Gold Plus?

The difference between SRF grades is the amount of marbling. All SRF grades have the buttery aroma, umami rich beef flavor and tenderness unique to American Wagyu, however each grade from Black to Gold Plus has a progressively higher levels of marbling. SRF Black scores BMS 6–8 on our Beef Marbling Score, which is significantly more marbling than USDA Prime. SRF Gold scores BMS 9–10 with dramatic marbling two levels above USDA Prime. SRF Gold Plus rates 10-12 BMS and is the pinnacle of American Wagyu marbling. For most occasions, SRF Black delivers an exceptional Wagyu experience. SRF Gold is used in competition BBQ and served in premier steakhouses. SRF Gold Plus is for those who want to share the experience of beef served at world class, Michelin level restaurants.

Which New York Strip product is right for me?

The right choice depends on how you plan to cook and serve the beef:

  • Wagyu NY Strip Slices are best for everyday cooking like sandwiches, Philly cheesesteaks, stir fries, and steak and eggs. These thin slices come from end-cut New York strip steaks and are designed for versatility.
  • Wagyu NY Manhattan Slices (also known as NY striploin slices) are center-cut slices with SRF Gold Plus™ marbling. These 8mm slices are ideal for hot pot, shabu shabu, and quick searing where tenderness and rich flavor stand out.
  • Wagyu NY Striploin Block is a square-cut, center-cut striploin designed for precision cooking. Its uniform shape promotes an even sear and consistent doneness from edge to edge.

All three come from the New York strip, but each is prepared for a different cooking experience.
