"Arrived sealed in a box full of dry ice. Have already reverse seared two of these and they are amazing. They take longer to cook since they are 4-4 1/2 inches thick. 45 minutes at 225 in the oven plus a 1 1/2 minute sear on each side gave me a medium rare finish"
