Beef Grading

The tenderloin roast is an exquisite cut that is beautiful roasted whole or cut into filet mignon steaks or smaller roasts. Choose our American Wagyu tenderloin to elevate any special meal.

Also known as the filet mignon roast, the whole tenderloin brings amazing flavor and fork-tender texture to your special occasion table. Although the tenderloin is generally a lean cut, our American Wagyu version has a surprising amount of marbling.

This roast is the entire beef tenderloin that can be prepared whole for a memorable meal with a gathering of special guests. There is also the option to cut this American Wagyu tenderloin into individual filet mignon steaks. The flavor profile of this unique roast features the butter-like flavor and texture associated with Japanese Wagyu beef combined with the hearty traditional flavor preferred by the American palate.

Completely thaw the roast. All Snake River Farms roasts ship frozen to maintain optimal quality. A completely frozen roast can take several days to thaw, so plan ahead.

Remove the roast from the fridge one hour before it is scheduled to go in the oven. This will help the roast cook evenly. 

The tenderloin is relatively small in diameter and will cook quickly. A reverse sear method is an excellent way to ensure the roast stays pink and tender from edge to edge. 

Rest your roast for 20 to 30 minutes after it’s pulled from the oven. The resting time allows the natural juices to be reabsorbed instead of running out onto your cutting board. 

Snake River Farms beef grades start at USDA Prime, the top grade on the USDA scale. The majority of SRF beef is marbled well beyond this level. To grade SRF, we use the 12-point Japanese Beef Marbling Score (BMS), which measures marbling that exceeds the USDA scale. 

SRF Silver™ - BMS of 4 to 5. Marbling comparable to USDA Prime. 

SRF Black® - BMS of 6 to 8. Significantly more marbling than USDA Prime.   

SRF Gold® - BMS of 9 to 12. The highest marbling available from Snake River Farms.

Loin

The loin primal supplies some of the most desirable steaks and is located below the backbone, between the rib and round sections. The sirloin is the portion toward the rear of the loin and is the source of top sirloin steaks and the picanha (coulotte). The front portion of the loin is known as the short loin and is home to the New York strip, Porterhouse, T-bone and filet mignon steaks.

Eight ounces of cooked tenderloin roast per person is a good serving size. If your table includes more robust appetites or if you want to plan for leftovers, add extra servings to your calculations. Boneless roasts will shrink about 20% in the cooking process.
