Using our heritage Kurobuta pork, Journeyman handcrafts our salami with authentic Italian curing methods in their USDA-certified curing and aging facilities custom built by technicians from Parma, Italy. Pete and his team are dedicated to crafting the very best food and wine experiences which you can taste with this offering of artisan salami.

This shelf stable salami requires no refrigeration and ships directly from Journeyman Meat Co. in Healdsburg, California.

SRF salami is packed in cryo-vac plastic packing to prevent drying. It is shelf stable, but store in the refrigerator for the longest shelf life.

What is Kurobuta Pork?

Kurobuta is a heritage breed with flavor superior to commodity pork. This premium pork is known as Berkshire in England and Kurobuta in Japan, where it is considered the culinary equivalent of Wagyu beef. Kurobuta contains abundant marbling for a heightened flavor profile and higher pH which creates a deep pink color and an increased moisture content. The result is pork with robust juicy flavor, tender texture and a hint of natural sweetness.
