Beef Grading

Dry-aging concentrates the natural beef flavor of steak for unrivaled flavor and firm texture. You can enjoy these unique characteristics in your favorite beef recipes with this unique product. Each package contains hand trimmed pieces of our best day-aged USDA Prime steaks and are ready to infuse top shelf flavor to any recipe that uses beef. A great staple to keep on hand to transform everyday meals into something special.

Steak cuts are random-sized pieces of steak and are perfect anywhere you normally use beef. Each cut is rich with marbling and flavor. 

For best results, completely thaw your steak cuts before cooking. Due to their random size, steak cuts work well in dishes where the beef is sautéed or pan seared. 

Season and sear steak cuts prior to adding to other ingredients to caramelize their exterior and build flavor. This is a good method to follow prior to adding to stews or chilis. 

Steak cuts are exactly as described, small pieces of richly flavored steaks so marinades are not required, but feel free to use your favorite for added spice or to match an ethnic recipe. 

The two top USDA grades are Prime and Choice, which have the highest levels of marbling.   

USDA Prime is the top grade on the USDA scale with the highest amount of marbling. Only 8 to 10% of all U.S. beef achieves this grade. 

USDA Choice falls directly below USDA Prime. Choice beef is high quality and has less marbling but offers an excellent value.

What is dry-aged beef?

Snake River Farms have partnered with the Prime Food Distributor out of New York to deliver a dry-aged experience unmatched by anyone in the industry. Their proprietary system carefully controls and measures every step of the dry-aging process. Lighting, airflow, humidity, temperature, and cleanliness are carefully controlled to create an environment which produces the purest essence of beef. All subprimals are aged to a minimum of 30 days and cut to perfection by master butchers.

Wet-Aged vs. Dry-Aged

At its most basic, dry-aging involves allowing large primal cuts of beef to rest in a climate-controlled place for a period of time. Natural enzymes start to break down the muscle tissue, tenderizing the meat. Wet-aging involves those same large cuts. They are vacuum-sealed to retain moisture and kept in refrigerators while the enzymes do the tenderizing work.

What is the difference between USDA Choice and Prime beef?

The USDA (United States Department of Agriculture) separates domestic beef into eight grades, based on intramuscular fat or marbling, and other qualities like tenderness, juiciness, and flavor. The two highest grades are Choice and Prime, respectively.
