Skip the cutting board and go straight to the hot pan with these thin slices of USDA Choice beef. Double R Ranch fajita slices are sourced from a variety of steaks including sirloin, ribeye, filet mignon, NY strip and flat iron. The slices are sized for fast, even cooking. Just season and sear for a meal in just a few minutes.  

Serving ideas: Sear with peppers and onions for fajitas. Toss with taco seasoning for burritos or tacos. Pile them high with cheese for killer nachos. Mix with fresh greens for steak salads. A delicious high protein addition to grain bowls.

 

Cooking Tips

SRF Wagyu fajita slices are cut just under ¼” thick and are random in size. They are perfect to add to any recipe that calls for thin slices of beef. 

For best results, completely thaw your steak cuts before cooking. 

Season and sear fajita slices prior to adding to other ingredients to caramelize their exterior and build flavor. This is a good method to follow for sautéing or stir frying. 

Beef Grading

The two top USDA grades are Prime and Choice, which have the highest levels of marbling.   

USDA Prime is the top grade on the USDA scale with the highest amount of marbling. Only 8 to 10% of all U.S. beef achieves this grade. 

USDA Choice falls directly below USDA Prime. Choice beef is high quality and has less marbling but offers an excellent value.

What is the difference between USDA Choice and Prime beef?

The USDA (United States Department of Agriculture) separates domestic beef into eight grades, based on intramuscular fat or marbling, and other qualities like tenderness, juiciness, and flavor. The two highest grades are Choice and Prime, respectively.

Wet-Aged vs. Dry-Aged

At its most basic, dry-aging involves allowing large primal cuts of beef to rest in a climate-controlled place for a period of time. Natural enzymes start to break down the muscle tissue, tenderizing the meat. Wet-aging involves those same large cuts. They are vacuum-sealed to retain moisture and kept in refrigerators while the enzymes do the tenderizing work.
