Serve a mouthwatering USDA Choice Tenderloin Roast for an elegant main course. While other cuts get their texture from marbling, the tenderloin is naturally tender and low in fat. Whether prepared whole or cut into steaks, our roasts are sure to impress your family and friends.

Our whole tenderloin roasts are hand trimmed to remove extra fat and the tenderloin chain, so there is more usable weight included with each roast.

Average weight: 3.75 lbs.

Completely thaw the roast. All Snake River Farms roasts ship frozen to maintain optimal quality. A completely frozen roast can take several days to thaw, so plan ahead.

Remove the roast from the fridge one hour before it is scheduled to go in the oven. This will help the roast cook evenly.

The tenderloin is relatively small in diameter and will cook quickly. A reverse sear method is an excellent way to ensure the roast stays pink and tender from edge to edge.

Rest your roast for 20 to 30 minutes after it’s pulled from the oven. The resting time allows the natural juices to be reabsorbed instead of running out onto your cutting board.

Understand the Marbling Scale

Marbling, or intramuscular fat, fills beef with flavor, juiciness and tenderness. The more marbling, the higher the beef grade. USDA Prime is the highest grade for American beef. Snake River Farms beef grades are based on a proprietary BMS grading scale.

Loin

The loin primal supplies some of the most desirable steaks and is located below the backbone, between the rib and round sections. The sirloin is the portion toward the rear of the loin and is the source of top sirloin steaks and the picanha (coulotte). The front portion of the loin is known as the short loin and is home to the New York strip, Porterhouse, T-bone and filet mignon steaks.

FAQ

Everything you need to know before your first bite.

Find answers to our customers' most commonly asked questions.

How much beef tenderloin per person?

Eight ounces of cooked tenderloin roast per person is a good serving size. If your table includes more robust appetites or if you want to plan for leftovers, add extra servings to your calculations. Boneless roasts will shrink about 20% in the cooking process.

What is the difference between USDA Choice and Prime beef?

The USDA (United States Department of Agriculture) separates domestic beef into eight grades, based on intramuscular fat or marbling, and other qualities like tenderness, juiciness, and flavor. The two highest grades are Choice and Prime, respectively.
