Chefs and butchers discovered the teres major many years ago, but it’s a tender and delicious cut to add to your steak shopping list. Each teres major is shaped like a small beef tenderloin and can be cooked or grilled whole, then sliced across the grain into round medallions.

This naturally tender cut requires a skilled butcher to extract it from the shoulder muscles, so it is not commonly found in grocery meat cases. The teres major is tender with a lot of beef flavor. It’s delicious with just salt and pepper, but this steak works well with your favorite seasonings and sauces.

Average weight: 1.5 lbs. Each package contains 2 steaks.

Cooking Tips

The teres major is naturally tender and is best cooked to medium rare. 

Be sure to completely thaw your steak before cooking. 

Internal temperature is the most accurate way to know if your steak is done. Use a good quality thermometer to monitor your steak. 

Rest your teres major at least 10 minutes before serving to let the internal temperature equalize and allow the juices to be reabsorbed. 

Slice against the grain at 90° to the direction of the muscle fibers. The grain on a teres major runs the length of the steak. 

Finish your steak with a light sprinkle of flaky salt for a nice presentation and an appetizing salty crunch. 

Beef Grading

Snake River Farms beef grades start at USDA Prime, the top grade on the USDA scale. The majority of SRF beef is marbled well beyond this level. To grade SRF, we use a 12-point Beef Marbling Score (BMS), which measures marbling that exceeds the USDA scale.

SRF Silver® - BMS of 4 to 5. Marbling comparable to USDA Prime. 

SRF Black® - BMS of 6 to 8. Significantly more marbling than USDA Prime.   

SRF Gold® - BMS of 9 to 10. Dramatically more marbling than USDA Prime. 

SRF Gold Plus™ - BMS of 11 to 12. The highest marbling available from Snake River Farms.

"I know "butcher's cuts" can be some of the best hidden gems so picked up a pack of these to try out. Was not disappointed. Similar tenderness to a filet mignon but way more flavor. Seared all around then oven finished at 375 until they hit 125 in the middle coasting to mid-rare. Perfection."

packaging was not properly sealed,

"packaging was not properly sealed, once defrosted the blood went everywhere. meat had freezer burn and was completely dried out. This is the second steak from SRF that this has happened. It is too expensive to buy from you all, just hoping that this doesnt occur again. I have tried to add a photo, but it is not allowing it."

A tale of two steaks

"A tale of two steaks and two butchers. One steak did have all the attributes of Wagyu - but the butchering was terrible. I had to cut away some large fatty pieces and silver skin that was at least 2 inches long. The other steak was perfectly butchered, but had almost no fat marbling and could hardly be considered Wagyu. For this price I was looking for better consistency, etc."
