American Wagyu New York strip slices are thin slices of end-cut New York steaks. End-cut steaks have an internal strip of collagenous material which is tender when sliced thin. This is a versatile cut that is amazing for sandwiches, but is also great for stir fries or recipes that call for thin strips of beef. Try them as a breakfast for quick steak and eggs. Quickly pan sear them and side with hash browns and over-easy eggs. Also delicious as a light and savory dinner entrée. Each one pound package contains about 8 beautifully marbled, rich and delicious slices of American Wagyu New York steak.

SRF New York strip slices are versatile for sandwiches and recipes. Use them anywhere you normally use quality beef. 

It's not necessary to completely thaw the slices before using. 

The end-cut steak contains connective materials that dissolve with heat. Consider a slightly higher temp than you normally choose. 

For an ideal stir fry ingredient, cut the slices into 2" pieces.

For a quick breakfast steak, season the slices on both sides and sear for 1 to 2 minutes on each side. Finish your steak slices with a light sprinkle of flaky salt for a nice presentation and an appetizing salty crunch. 

Snake River Farms beef grades start at USDA Prime, the top grade on the USDA scale. The majority of SRF beef is marbled well beyond this level. To grade SRF, we use the 12-point Japanese Beef Marbling Score (BMS), which measures marbling that exceeds the USDA scale. 

SRF Silver™ - BMS of 4 to 5. Marbling comparable to USDA Prime. 

SRF Black® - BMS of 6 to 8. Significantly more marbling than USDA Prime.   

SRF Gold® - BMS of 9 to 12. The highest marbling available from Snake River Farms.

Loin

The loin primal supplies some of the most desirable steaks and is located below the backbone, between the rib and round sections. The sirloin is the portion toward the rear of the loin and is the source of top sirloin steaks and the picanha (coulotte). The front portion of the loin is known as the short loin and is home to the New York strip, Porterhouse, T-bone and filet mignon steaks.
