Details

Start a new tradition with the Snake River Farms American Wagyu Manhattan roast. It's not as large as a typical roast, which means it cooks quickly. Of all the roast beef cuts, those from the loin region are the most indulgent and satisfying. Consider a Manhattan roast the shareable size of a New York strip or Delmonico steak. Some even call it a New York strip roast.

Each Manhattan strip roast is hand-tied with kitchen twine to create a uniform shape that cooks evenly and lends an artisanal touch to this elegant cut. This rich, delicious roast brightens your Sunday dinner or holiday table. You’ll love the convenient size and quick cooking time. Your guests will be delighted by the deeply marbled, wonderful complexity and subtle sweetness of American Wagyu beef. The Manhattan strip roast is the perfect size when you have fewer folks at your holiday table.

Average weight: 3 lbs.

This is a natural product, and the actual weight may vary by +/- .5 lb.

Cooking Tips

The Manhattan roast is trimmed and ready to go when you receive it.

Season the roast with salt and pepper or your favorite seasonings.

Sear the Manhattan roast in a skillet, rotating the roast to achieve a golden brown crust on all sides.

Place the roast in an oven preheated to 375°F and cook until the internal temperature reaches 120°F for medium rare, about 45 minutes.

Remove from the oven and let rest 10 to 15 minutes. Slice and serve.

Beef Grading

Snake River Farms beef grades start at USDA Prime, the top grade on the USDA scale. The majority of SRF beef is marbled well beyond this level. To grade SRF, we use a 12-point Beef Marbling Score (BMS), which measures marbling that exceeds the USDA scale.

SRF Silver® - BMS of 4 to 5. Marbling comparable to USDA Prime.

SRF Black® - BMS of 6 to 8. Significantly more marbling than USDA Prime.

SRF Gold® - BMS of 9 to 10. Dramatically more marbling than USDA Prime.

SRF Gold Plus™ - BMS of 11 to 12. The highest marbling available from Snake River Farms.

Loin

The loin primal supplies some of the most desirable steaks and is located below the backbone, between the rib and round sections. The sirloin is the portion toward the rear of the loin and is the source of top sirloin steaks and the picanha (coulotte). The front portion of the loin is known as the short loin and is home to the New York strip, Porterhouse, T-bone and filet mignon steaks.

Wow. The Manhattan Roast was

"Wow. The Manhattan Roast was the perfect size for our family of three. . . plus French Dips plus Pho (so. . . lots of leftovers). It looks small, but the meat is so rich with a ton of marbling that your portions are smaller. I'm now planning on a rib roast for Xmas AND a sous vide Chuck Roast later on. I'm fully sold."

Terrible. A thick ~1lb of

"Terrible. A thick ~1lb of inedible gristle on top; the remainder was streaked with many, many large fat inclusions. Only suitable for sandwiches after tedious dissection of each slice. Yield about 30%. No noticeable marbling, despite "gold" quality. Very sad."

The Wagyu NY Manhattan Roast

"The Wagyu NY Manhattan Roast is my wife's favorite meal. I use a herb rub and slide fresh Rosemary under the strings. 3 hours on the smoker at 230 and sear in cast iron, just fabulous!"

GUY B. (5/5)

"I was happy with quality of the Gold Manhattan Roast. I over estimated the size of the cut. My fault."

Christopher C. (4/5)

I am a long time

"I am a long time convert to your burger patties. Best burger I ever ate and/or cooked. The Manhattan Roast is over the top excellent. I cut it up into about 4 pieces and ate one. My taste buds exploded. It was packed full of beefy wonderfulness. I am donating blood and perhaps a kidney so I can afford to by the Strploin Roast although I seriously doubt it can be any better than the delightful Mahatten Roast!! Roger E"
