Details

Believe it or not, we receive requests for turkeys every holiday season, so we did a little research. Our favorite was this special bird – The American Heirloom Turkey from Diestel (DEE-stull) Family Ranch. These USDA Certified Organic turkeys are known for their tenderness and deeply rich flavor.

Like our SRF products, this is a unique, heirloom breed. Diestel raises Auburn, Black and American Bronze turkeys with a history that dates back hundreds of years. Regular turkeys have white feathers, while these heirloom birds have auburn, reddish brown feathers.

Diestel is a family ranch that’s been in business since 1949 and located in Sonora, California about 125 miles east of San Francisco. We appreciate the way Diestel raises their turkeys – following similar principles and standards we use for our American Wagyu beef and Kurobuta pork. All Diestel’s turkeys are produced according to strict animal welfare and environmental standards. They are fed a proprietary 100% organic vegetarian feed made from corn, soy, vitamins and minerals free from any animal by-products, antibiotics or chemicals.

The result is a turkey that is juicy, tender and a flavor that’s richer than conventional birds. Available in limited quantities. Each turkey is flash frozen to lock in freshness. Allow 3 to 4 days to gently thaw in the refrigerator.

Weight range: 14 to 16 lbs.

Cooking Tips

Preheat oven to 325º F.

Remove thawed turkey from packaging. If it’s not fully thawed, run it under cool water, bag and all.

Remove the neck and giblets from the body cavity. Rinse with cold water and pat dry with a paper towel.

Rub the exterior of turkey with your favorite rub. Stuff the turkey, if desired.

Set the turkey in an open roasting pan, breast side up, and cover the bottom of the pan with about 2 cups of broth or water.

Place roasting pan in the oven. A 14 to 16 lb. turkey has an approximate roasting time of 2.75 to 3.5 hours. If you don’t stuff the bird, the roasting time is about 2.25 to 3 hours.

Don’t rely on time alone. Use a thermometer to check the temperature in multiple spots. When the internal temperature is 150°F in the thickest part of the bird and the leg temperature is at least 165°F, remove the turkey from the oven.

Allow it to rest for 30 minutes. Slice and serve after resting.
