8 large eggs

1/4 cup milk

2 tablespoons unsalted butter

1/4 cup chopped scallions

2 SRF jalapeño cheddar sausages, cut into 1/4-inch-thick rounds

1 cup halved cherry tomatoes

Crumbled Cotija cheese, for topping

Fresh cilantro leaves, for topping

Tortillas, for serving (optional)
Directions
Crack the eggs into a large bowl then whisk in the milk, 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper. Set the eggs aside.
In a large skillet set over medium heat, add the butter. Once it is melted, add the slice sausage and scallions. Cook, stirring, until the sausage is lightly browned, about 3 minutes.
Reduce the heat to low. Add the beaten eggs and cook, stirring frequently, until scrambled to your desired consistency.
Top the scramble with the cherry tomatoes, Cotija cheese and cilantro and serve with tortillas (optional).
