Sausage and Fig Grilled Pizza

Grilled pizza is a quick and easy way to make a favorite food on a weeknight or for a dinner party. Cooking the dough directly on the grill grates on both sides before topping it ensures the crust is fully cooked and that it doesn’t stick to the grates. Using SRF Breakfast Sausage and fresh figs and fig jam, this recipe hits all the sweet and savory notes for a delicious pizza. Topping with fresh lightly dressed greens is optional but delicious, and makes a beautiful presentation for a party. Using store-bought pizza dough makes this recipe easy, but homemade dough would also work.

Ingredients
½ package SRF Breakfast Sausage
1 (1 lb) ball pizza dough
Flour, as needed for rolling out the dough
¼ - ½ cup alfredo sauce, optional
1 cup shredded mozzarella
¼ cup fresh mozzarella
2 tablespoon Parmesan cheese, finely grated, plus more for serving
2 fresh figs, sliced
2-3 ablespoons fig jam
2 cups fresh greens, such as arugula, frisee lettuce, and radicchio
1 teaspoon lemon juice
Olive oil, as needed
Flaky salt, as needed
Directions
Prepare the SRF Breakfast Sausage; In a skillet over medium heat, cook the sausage, breaking up the sausage into bite-sized pieces with a wooden spoon as it cooks, about 15 minutes. Remove the sausage from the heat and let cool
Preheat the grill to high heat (450° to 550°F).
Roll out the pizza dough using your hands or a rolling pin to stretch it into a 12-inch round, ¼-½-inch thick, using a little flour as needed to keep it from sticking to the work surface. Transfer the dough to a pizza peel or a large inverted baking sheet.
Place the dough directly on the grill grates and cook for 2 to 3 minutes until browned and starts to puff up, then flip and continue cooking for another 2 to 3 minutes. Remove the cooked dough from the grill and transfer back to the peel or baking sheet.
Build the pizza; start with the alfredo sauce, if using or alternatively a drizzle of olive oil, and spread evenly on the base leaving a 1 to 2inch border along the crust. Top with shredded and fresh mozzarella, the cooked SRF Sausage, sliced figs, and then place dollops of fig jam on the pizza. Finish with finely grated parmesan cheese.
Return the pizza to the grill grates and close the lid and cook until warmed through and the cheese has melted, 2-3 minutes.
Remove the pizza from the grill. In a small bowl, place the greens, and drizzle with olive oil, lemon juice, and flaky salt. Top the pizza with the dressed green and additional parmesan cheese, as desired. Serve warm. Enjoy!
