These ricotta meatballs in vodka sauce are rich, tender, and packed with flavor. The ricotta keeps the meatballs incredibly soft and juicy, while a creamy vodka sauce coats every bite. To balance the richness, the dish is finished with a smooth lemon ricotta cream and a drizzle of hot honey for the perfect touch of brightness and sweet heat. Served over pasta and topped with parmesan, it’s a comforting yet elevated dinner that’s easy enough for a weeknight but impressive enough to share.
Ingredients

1 lb. American Wagyu Ground Beef

1 lb. Kurobuta Ground Pork

1 cup whole milk ricotta
-
¾ cup freshly grated parmesan
-
¾ cup panko bread crumbs
-
2 eggs
-
3 cloves garlic, finely grated
-
2 tablespoons chopped fresh parsley

1 teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon crushed red pepper

Tallow or oil for browning
Vodka Sauce
-
2 tablespoons butter
-
1 small shallot, finely diced
-
3 cloves garlic, minced
-
¼ to ½ teaspoon red pepper flakes

¼ cup vodka
-
1 (28 oz) can crushed San Marzano tomatoes
-
½ cup heavy cream
-
½ cup grated parmesan
-
Salt to taste
Lemon Whipped Ricotta
-
1 cup whole milk ricotta
-
Zest of 1 lemon
-
1 to 2 teaspoons fresh lemon juice
-
1 tablespoon olive oil
-
Pinch of salt
Directions
The Meatballs
Preheat oven to 400ºF.
In a large bowl, gently mix everything together. Don’t overwork it - just until combined.
Scoop into baseball sized meatballs (about 5 tablespoons each)
Brown in an oven-safe skillet with oil. About 2 to 3 minutes per side.
Transfer skillet to oven and bake 10 to 12 minutes until internal temperature is between 160ºF and 165ºF.
The Vodka Sauce
Sauté shallots in butter until soft. Add garlic and red pepper flakes.
Stir in vodka and simmer 2 to 3 minutes to cook off alcohol.
Add tomatoes. Simmer 15 to 20 minutes.
Stir in cream and parmesan. Season to taste. Move the meatballs to the sauce and let the flavors meld until ready to serve.
If serving over pasta, toss pasta directly in the sauce with a splash of pasta water.
Lemon Whipped Ricotta
Blend or whip all ingredients until smooth and airy.
To Assemble
Spoon vodka sauce onto plate or shallow bowl. Add the meatballs and top each with a generous dollop of lemon whipped ricotta. Finish with fresh basil and a drizzle of hot honey over the top.
