Pork Satays with Peanut Sauce

Transform tenderloin into snackable skewers by cubing and searing the pork before serving it with homemade peanut sauce for dipping. These fast, flavor-packed satays can be made bite-sized for crowd-friendly snacking or assembled on larger skewers to become the main event.

Ingredients
Peanut Sauce

1/3 cup creamy or crunchy peanut butter

3 tablespoons unsweetened coconut milk

1 tablespoon low sodium soy sauce

1 tablespoon fresh lime juice

1 1/2 tablespoons brown sugar

1 teaspoon minced garlic

1 teaspoon grated fresh ginger
The Satays
-
1 Kurobuta Pork tenderloin, cut into 1-inch cubes

Avocado oil, for cooking
Directions
Peanut Sauce
Microwave the peanut butter in a medium bow for 10 to 15 seconds until it is easy to stir.
Add the coconut milk, soy sauce, lime juice, brown sugar, garlic, and ginger to the bowl and stir to combine. Set the sauce aside.
The Satays
Season the cubes of pork with salt and pepper.
Thread several pork cubes onto each skewer, being careful not to push them too close together. (Even spacing on the skewers allows the pork to cook on all sides.)
Heat a large skillet or grill pan over medium-high heat. Lightly grease the skillet with oil then arrange the skewers in a single layer. Sear them for 3 to 4 minutes on all sides until they reach an internal temperature of 145°F.
Remove the skewers from the skillet and serve them with the peanut sauce for dipping.
