Pan Roasted Brussels Sprouts with Bacon

This dish balances out the richness of steak and potatoes with something green. Brussels sprouts add an earthy flavor that's slightly sweet and a touch bitter. SRF Apple Brined Bacon adds a hint of sweetness, but any thick bacon works.
Ingredients

1 pound small Brussels sprouts

4 slices SRF Apple Brined Uncured Bacon

2 tablespoons olive or other vegetable oil

1 lime, cut in half
Directions
Wash Brussels sprouts. Trim stems and cut in half, lengthwise.
Cut bacon into ¼ inch strips. Place in a large, flat skillet and turn heat to medium. Turn occasionally until the bacon is crisp and the fat has rendered.
Remove cooked bacon with a slotted spoon and place on a plate to hold.
Add olive oil to the pan and t urn heat to medium-high. Place Brussels sprouts on the pan cut side down. Cook without stirring until the flat surface is brown, about 15 minutes. Flip and let the other side cook until the sprouts are bright green. Don’t overcook. You want the texture to be firm.
Add cooked bacon and stir to combine. Heat for 5 minutes to rewarm bacon.
Squeeze both lime halves over the pan and stir to distribute the juice.
Remove and place in a bowl or platter. Serve.
