One-Pan Loaded Breakfast Sausage Skillet

One-pan, loaded with flavor and minimal cleanup. This breakfast skillet recipe is made with fresh ingredients and a whole package of sweet and smoky breakfast sausage. Topped with creamy feta cheese and eggs nestled in the sausage, potatoes, spinach, bell pepper, onion, and tomatoes; it is a protein packed breakfast that will satisfy the whole family.
Ingredients
- 1 Tbsp avocado or other high-heat cooking oil
- 1 (1 lb) Package SRF Kurobuta Pork Breakfast Sausage
- ½ medium yellow onion, diced ½-inch pieces (about 1 cup)
- 1 green or red bell pepper, diced ½-inch pieces (about 1 cup)
- 1 medium gold or yellow potato, peeled and diced ½-inch pieces (about 1 cup)
- ¼ tsp kosher salt
- ¼ tsp pepper
- ½ cup cherry tomatoes, halved (about 15 small tomatoes)
- 1 ½ cups fresh baby spinach
- 6 eggs
- ¼ cup feta cheese, crumbled
Directions
In a large skillet over medium heat, add the oil, and using your hands, break up the sausage as you place it into the skillet. Cook, stirring occasionally, until the sausage is browned and cooked through, using a wooden spoon or spatula to break up any larger pieces as it cooks, about 8 minutes.
Remove the sausage from the pan using a slotted spoon, reserving the grease in the skillet for cooking, and place on a dish or in a bowl and set aside. In the skillet, add in the onion, bell pepper, and potato, and season with salt, and pepper. Cook, stirring occasionally, until the vegetables are tender and potatoes have cooked through, 8 to 10 minutes. [Add a tablespoon of water at a time, as needed, if the vegetables stick to the skillet. Stir to scrape up any browned bits from the bottom of the pan. The water will also steam the potatoes and help them cook quickly.]
Return the sausage to the pan, and add the tomatoes and spinach, and stir to combine. Make 6 nests in the sausage and veggies in the pan for eggs, and crack an egg into each. Cover and cook for 1 to 2 minutes until the whites have set but yolks are still runny.
Top with crumbled feta cheese and serve warm. Enjoy!
