This Japanese-style braised chuck roast starts with American Wagyu chuck rubbed in white miso, then braises in beef broth with a whole head of garlic for 3½ hours. Bachan’s Japanese BBQ sauce goes in for the final 45 minutes, leaving the beef tender and juicy with a rich, savory flavor. Serve it over white rice with sesame seeds and cilantro for a dinner that feeds six to eight.

Ingredients

  • 1 SRF Chuck Roast
  • 1 head of garlic, cut in half
  • 1 cup beef broth
  • 2 tablespoons of beef tallow (or olive oil)
  • 2 tablespoons white miso
  • ¾ cup Bachans Japanese BBQ sauce

Directions

  1. Preheat the oven to 325° degrees Fahrenheit. Cut the chuck roast into large chunks.
  2. Rub the beef with white miso. Add all of the ingredients for the spice rub to a bowl and mix well. Coat the beef well with the spice mixture.
  3. Add beef tallow to a dutch oven or large braising pot. Place the head of garlic into the dutch oven followed by the chunks of beef. Add the beef broth and cover with a lid. Place into the oven for 3 ½ hours.
  4. Remove the pot from the oven and add the Japanese BBQ sauce. Place the lid back on and bake for another 45 minutes. The meat should be tender and juicy.
  5. Pair the beef with your favorite toppings. I enjoyed it with white rice, sesame seeds, cilantro, and sauce.
