Snake River Farms New York strip paired with a bright, fragrant green curry sauce that keeps you coming back for you. Serrano, shallot, fresh turmeric, ginger, and garlic get blended into a paste, bloomed in a hot pan until fragrant, then simmered down with coconut milk, brown sugar, and fish sauce until it deepens into a rich, dark green. The steak is grilled hot and fast to a good medium-rare, sliced against the grain, and plated over a pool of curry sauce with steamed sushi rice on the side.

Ingredients
Curry Sauce
- 1 serrano
- 1 small shallot (30grams)
- 8 grams fresh turmeric
- 13 grams fresh ginger
- 13 grams garlic
- 1 gram ground coriander
- Handful of cilantro
- 25 grams neutral oil
- 1 can coconut milk
- 15 grams brown sugar
- 20 grams fish sauce
New York Steak
- Snake River Farms New York Steaks
- Salt and black pepper, to taste
For Serving
- Steamed rice
- Limes
- Pickled Fresnos
- Scallion, chopped
Directions
Blend the serrano, shallot, turmeric, ginger, garlic, coriander, cilantro, and neutral oil until smooth.
Pour the blended paste into a hot small saucepan and cook for a few minutes until fragrant.
Add the coconut milk, brown sugar, and fish sauce, then cook over low heat for at least 20 minutes, until the sauce has thickened and turned a darker green.
Season the New York steak generously with salt and pepper and grill over live fire to desired temp — we love this cut medium-rare.
Let the steak rest, then slice against the grain.
Spoon the curry sauce onto the plate, top with the sliced steak, and serve rice on the side.
