1 American Wagyu Black® Hanger Steak
- Salt & pepper
- 1 pint cherry tomatoes
- 1 teaspoon neutral oil
- 2 tablespoons shallot, minced
- 4 cloves garlic, chopped

1 to 4 Thai chiles, thinly sliced (adjust based on heat preference)
- 1/2 cup cilantro, chopped
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- Juice of 1 lime
- Little Gem lettuce (or butter lettuce), leaves separated
- 2 cups cooked sticky rice
Directions
Season the hanger steak generously with salt and pepper. Let rest while you preheat your grill to high heat.
In a cast iron skillet over high heat, add neutral oil and the cherry tomatoes. Cook, stirring occasionally, until tomatoes blister and begin to burst, about 6 to 8 minutes. Transfer to a bowl.
- Using a mortar and pestle or food processor, combine the shallot, garlic, and Thai chiles into a chunky paste. Stir in the cilantro, fish sauce, oyster sauce, and lime juice, then mix the paste into the bowl with the blistered tomatoes to create the Tiger Bite Sauce.
Grill the hanger steak to desired doneness, about 4 to 5 minutes per side for medium-rare depending on thickness. Let rest for 5 to 10 minutes, then slice against the grain.
- To serve, lay out lettuce cups, a bowl of sticky rice, sliced steak, and the Tiger Bite Sauce. Let guests build their own bite: a leaf of lettuce, a scoop of sticky rice, slices of steak, and a spoonful of sauce.
