Make steak the star of the appetizer show with these two-bite toasts starring tender slices of flank steak served on the ultimate homemade blue cheese sauce. Pro Tip: Entertain with ease by prepping the sauce and toasts a day in advance, and then assembling them with the sliced steak right before serving.

Flank Steak Crostini with Blue Cheese Sauce

Ingredients

  • ½ American Wagyu Flank Steak

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 2/3 cup blue cheese crumbles

  • 1 clove garlic, minced

  • 1 teaspoon Worcestershire sauce

  • 1 French baguette, cut into 1/2-inch-thick slices

  • Avocado oil

  • 1 tablespoon chopped fresh chives

Directions

  1. Preheat the oven to 400°F.

  2. Make the blue cheese sauce by stirring together the mayonnaise, sour cream, blue cheese crumbles, minced garlic, Worcestershire and 1/4 teaspoon pepper in a small bowl. Set the sauce aside.

  3. Drizzle both sides of the baguette slices with oil then arrange them in a single layer on a baking sheet. Toast the bread for 5 to 7 minutes in the oven until both sides are golden brown and crispy, flipping them once halfway through. Remove the toasts from the oven and set them aside.

  4. Pat the flank steak dry then season it generously with salt and pepper.

  5. Place a large skillet over medium-high heat then add enough oil to lightly coat the bottom of the skillet. Once the oil is hot, add the flank steak and cook it, flipping it once, until it reaches your desired temperature (130°F for medium-rare). Remove the steak from the skillet and let it rest for 10 minutes before cutting it against the grain into very thin slices.

  6. Assemble the crostini by topped the toasts with a portion of the blue cheese sauce, followed by the steak and then the chives. Serve immediately.
