Ingredients

2 lbs. Kurobuta ground pork

1 1/2 teaspoons garlic powder

1 teaspoon ground sage

1 teaspoon fennel seeds, crushed

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 1/2 Tablespoons maple syrup

Vegetable or avocado oil, for cooking
Directions
Line a baking sheet with parchment or wax paper.
In a large bowl, stir together the garlic powder, ground sage, crushed fennel seeds, salt and pepper.
Add the ground pork and maple syrup to the bowl. Using your hands, combine the mixture but do not overmix.
Scoop out 1/4-cup portions of the mixture. Using your hands, shape the mixture into balls then flatten them into 3-inch-wide patties. Arrange the patties on the lined baking sheet.
Place a skillet over medium heat and coat it lightly with vegetable oil. Once the oil is hot, brown the patties on both sides until they are cooked through (about 3 minutes per side) and reach an internal temperature of 160°F. Repeat the cooking process with the remaining patties, adding more oil as needed.
Serve warm or let cool completely then refrigerate or freeze in an airtight container.
