Apple Brined Bacon & Brussels Sprouts Gratin

Ingredients

  • 5 strips of SRF apple brined uncured bacon, cut into ½ inch chunks

  • 2 lbs of brussels sprouts, trimmed and sliced thin

  • ½ cup shallots, sliced thinly

  • 4 cloves of garlic, minced

  • 2 cups of heavy cream

  • 1 cup of parmesan cheese, grated

  • 1 cup of Gruyère cheese, grated

  • 1 teaspoon Kosher salt

  • ½ teaspoon black pepper

  • ¼ teaspoon of ground nutmeg

  • 2 teaspoons of fresh thyme, chopped

  • 1 cup of Panko breadcrumbs

Directions

  1. Preheat the oven to 425°F

  2. In a large ovenproof skillet over medium low heat cook bacon until golden brown and crispy. Remove the bacon with a slotted spoon and set aside.

  3. To the same pan sauté the shallots until softened for about 4 minutes. Add the minced garlic and cook for another minute.

  4. Add the Brussels sprouts and stir. Season with salt, pepper, nutmeg and thyme.

  5. Pour in the heavy cream and fold in the cheeses until the cheese is starting to melt.

  6. Top with panko and place in the oven for 20 minutes until bubbling and lightly browned on top.
