30-Minute Pork and Broccoli Stir-Fry

A solid stir-fry recipe is the ultimate trusty standby for hectic weeknights, and this 30-minute recipe turns Snake River Farms Pork Tenderloin into a takeout-fakeout meal the whole family will love. Slicing the tenderloin into thin medallions speeds up the cook time, while adding an array of veggies is a great way to clean out the fridge from leftover odds and ends.

1 pack Snake River Farms Pork Tenderloin (2 tenderloins)

1/2 cup low-sodium soy sauce, divided

1/2 cup beef broth

3 tablespoons hoisin sauce

2 tablespoons brown sugar

1 tablespoon cornstarch

3 tablespoons avocado or vegetable oil, divided

2 teaspoons minced garlic

4 cups broccoli florets

rice or noodles, for serving
Directions
Cut the tenderloins width-wise into 1/2-inch-thick medallions then add them to a bowl. Stir in 1/4 cup of the soy sauce and set the bowl aside at room temperature for 10 minutes.
In a separate small bowl, whisk together the remaining 1/4 cup soy sauce, beef broth, hoisin sauce, brown sugar and cornstarch. Set the sauce aside.
Heat 2 tablespoons oil in a large skillet over medium-high heat. Once the oil is hot, add the pork in a single layer in the hot pan. Cook, undisturbed, until it naturally releases from the pan, 1 to 2 minutes. Flip the pork once and continue cooking an additional 1 to 2 minutes. Using a slotted spoon, transfer the pork to a plate.
Reduce the heat to medium. Add the remaining 1 tablespoon oil to the skillet then stir in the garlic and broccoli and cook for 2 minutes.
Return the pork (with all juices) to the skillet then stir in the prepared sauce. Bring the mixture to a boil then reduce it to a simmer and cook until the sauce has thickened slightly, about 2 minutes.
Serve the pork and broccoli over rice or noodles.
